A gazpacho is a traditional recipe and one of the best known dishes of Spanish cuisine. It is a cold soup where tomato, cucumber, oil, vinegar and garlic are the main ingredients. However, you can prepare a delicious gazpacho with a fruity touch by replacing the cucumber with…nectarines! The acidity of the nectarine combines very well with the tomato and gives the soup a creamy and smooth texture.
Ingredients to make Nectarine Gazpacho:
- 4 tomatoes
- 3 nectarines
- 1 splash of apple cider vinegar
- 1 teaspoon salt
- 2 cloves of garlic
- 2 cups of water (480 milliliters)
- 1 splash of olive oil
- 1 piece of stale bread
How to make Nectarine Gazpacho:
- Wash and cut the tomatoes and nectarines into pieces. Place them in the blender jar.
- Add the garlic, salt, a good splash of vinegar to taste and a splash of olive oil to the blender.
- Add a cup of water and blend until smooth.
- Add the rest of the water if the texture seems too thick, check the level of salt and vinegar and blend again if necessary.
- If the flavor of the nectarine gazpacho seems too acidic, add a piece of stale bread soaked in water and beat again until there are no lumps.
- Pass the nectarine gazpacho through a strainer to remove any chunks and serve very cold with the nectarine and apple cut into small cubes.
