Neapolitan style noodles recipe

Ingredients to make Neapolitan Noodles:

  • 1 unit of red pepper
  • 1 unit of green pepper
  • 1 unit of Eggplant
  • 1 zucchini unit
  • 1 unit of onion
  • 6 units of tomatoes
  • 3 garlic cloves
  • 1 small glass of white wine
  • 1 dessert spoon of oregano
  • 1 dessert spoon of Thyme
  • 1 dessert spoon of Parsley
  • 400 grams of noodles
  • 100 cubic centimeters of olive oil
  • 1 bay leaf
  • 4 tablespoons Parmesan cheese

How to make Neapolitan Noodles:

  1. First, the pasta is cooked with a drizzle of olive oil and a bay leaf.
  2. Next, put a little olive oil in a soup tureen, cut the garlic very finely and fry it.
  3. When they are ready, add the finely chopped onion until it is golden brown, then add the chopped tomatoes (with skin and everything) and add the wine, oregano, thyme and parsley and salt to taste, put over low heat for half an hour.
  4. In another tureen you also need to put some olive oil and sauté the red and green peppers, the zucchini, and the aborigine (peeled first), all previously cut into squares, salt and leave for another half hour until the vegetables they are very soft.
  5. Then drain the pasta and add the tomato sauce and sauté the vegetables for a few minutes and when it is still hot add the cheese, and it is ready to eat.
