Ingredients to make NAVARRA SOUP:
- 75 g chorizo
- 75g Serrano ham
- 4 slices of toasted bread
- 3 lettuce hearts
- 3 potatoes
- 2 leeks
- 1 onion
- 2 cloves of garlic
- 2 carrots
- 150g green beans
- 200g pumpkin
- 1 small cauliflower heart
- 6 tablespoons olive oil
- 1 l broth or more if necessary
- salt and white pepper
How to make NAVARRA SOUP:
- Crumble the chorizo and chop the ham; peel the onion, potato, leek, garlic, carrot and pumpkin; remove the strands and ends of the beans and chop everything. Remove the stems from the cauliflower, leaving only the twigs. Sauté the ham and chorizo in a large pot with oil; add the onion, leek and garlic and lightly brown them, turning them with a spoon. Add the bread and brown it and finally add the rest of the vegetables, letting them sauté for 10 minutes; season
- Add the broth, cover the pot and cook for about an hour over low heat.
- When all the ingredients are tender, transfer the soup to a fire-resistant clay pot and place it in the hot oven until it forms a crust. Serve immediately. It can be accompanied by poached eggs.
