Nacatamal Recipe

Ingredients to make Nacatamal:

  • 2 corn kernels
  • 2 tablespoons of lime
  • 1/4 pound of butter
  • 2 cups of broth
  • 2 cloves of garlic
  • 1 onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 teaspoon fresh parsley
  • 1 dash of color
  • 1 chicken breast, cooked
  • 1 pound pork, cooked
  • 2 tomatoes
  • 1/2 cup of cooked chickpeas
  • 4 tablespoons capers
  • 2 potatoes cooked and chopped
  • 12 stuffed olives
  • 1/2 cup of cooked rice
  • ground pepper to taste
  • 10 pieces of banana leaves
  • salt to taste

How to make Nacatamal:

1.1-Put the lime together with the corn, in boiling water and cook over low heat, until the skin of the grain comes off.

2.Rinse with plenty of water and let stand, covered with water for 3 days, changing the water every day.

3.Grind the corn, add 1/2 pound of butter and salt and knead, gradually adding the broth, until the dough is smooth and homogeneous.

4.2-In the remaining butter, fry the garlic, the onion, the peppers, the parsley and the tomatoes, all chopped, the color, salt and pepper.

5.Add the meats, cooked and chopped, the remaining ingredients and cook for a few minutes.

6.3-Prepare the banana leaves, giving them a rectangular shape.

7.Put a little dough on each sheet.

8.On this, a couple of tablespoons of the filling and another little dough.

9.Wrap well, tie with twine (cord) and cook in salted water for 30 minutes.
