Ingredients to make mussel soup with seafood:
- 20 mussels
- 1 medium onion
- 3 oil tablespoons
- 2 thick leeks
- 2 medium tomatoes
- 250g of rice
- 1 clove
- 1 sprig of parsley
- 1 bay leaf
- 1 pinch of pepper and saffron
How to make mussel soup a la marinera:
- We clean the mussels well and open them with steam (that is, with their own water).
- Remove the meat and reserve.
- Pass the liquid from cooking the mussels through a fine sieve and reserve as well.
- Finely chop the onion and the white part of the leeks, fry in the oil until they begin to color.
- We add the peeled and cut tomatoes, 4 minutes later, we add 1 liter and 1/2 of boiling water.
- Season with the clove, parsley, and bay leaf. When it starts to boil again, add the rice, mixing well.
- Lower the heat a little and season with the pinches of pepper and saffron, let the rice cook and once it is done, remove the sprig of parsley and the bay leaf.
- Lastly, add the mussel meat and its cooking liquid, let it cook for 2 more minutes and sprinkle with a little chopped parsley.
