Mussel soup recipe with seafood

Ingredients to make mussel soup with seafood:

  • 20 mussels
  • 1 medium onion
  • 3 oil tablespoons
  • 2 thick leeks
  • 2 medium tomatoes
  • 250g of rice
  • 1 clove
  • 1 sprig of parsley
  • 1 bay leaf
  • 1 pinch of pepper and saffron

How to make mussel soup a la marinera:

  1. We clean the mussels well and open them with steam (that is, with their own water).
  2. Remove the meat and reserve.
  3. Pass the liquid from cooking the mussels through a fine sieve and reserve as well.
  4. Finely chop the onion and the white part of the leeks, fry in the oil until they begin to color.
  5. We add the peeled and cut tomatoes, 4 minutes later, we add 1 liter and 1/2 of boiling water.
  6. Season with the clove, parsley, and bay leaf. When it starts to boil again, add the rice, mixing well.
  7. Lower the heat a little and season with the pinches of pepper and saffron, let the rice cook and once it is done, remove the sprig of parsley and the bay leaf.
  8. Lastly, add the mussel meat and its cooking liquid, let it cook for 2 more minutes and sprinkle with a little chopped parsley.
