Ingredients to make mussel croquettes:

• 1 kilogram of mussels

• 1 onion

• 40 grams of wheat flour

• 50 grams of butter

• 350 milliliters of milk

• 1 glass of mussel water

• 2 eggs

• 250 grams of breadcrumbs

• 1 glass of oil

How to make mussel croquettes:

Clean the mussels and discard any that are bad or open. Place them in a saucepan with a glass of water and cook them. When you see that they are open, turn off the heat.

Let the mussels cool, remove the meat and reserve it. On the other hand, strain the cooking water and save it, since you will use it to make the mussel croquettes tastier.

With the help of scissors, cut the mussels into small pieces. Remember that you can also make pickled mussel croquettes or any other preserve, so you would skip the step of cooking them. Of course, it also saves the liquid of the preserve. Chop the onion very small, put a saucepan on the fire with the butter and brown the onion.

When the onion is golden, add the chopped mussels and mix both ingredients. You can also make your mussel and prawn croquettes, in this case, you must peel the prawns, cut them into small pieces and add them now. Add the flour, mix and cook for a couple of minutes so that the flour is not raw. Gradually add about 150 ml of the mussel cooking water, mixing to form a thick sauce.

Add the milk also little by little and stirring. Mix without stopping stirring until a béchamel is formed. At this point, taste for salt and correct if necessary, although the mussel already has a lot of flavor. When you see that the dough detaches from the pan, it is ready and you can turn off the heat. Take the dough out and put it in a bowl to cool. Once cold, put it in the fridge for a while, so it will compact a bit and you will be able to better form the mussel croquettes. It can be left overnight.

Beat the eggs in a bowl and put the breadcrumbs in another. Take the dough out of the fridge and form long balls to pass them first through the egg and then through the breadcrumbs.

Heat a frying pan with plenty of oil and, when the oil is very hot, fry the homemade mussel croquettes in batches so they don’t stick. Flip them over if necessary so they brown all over. As you remove them from the pan, place them on a plate with kitchen paper to absorb the oil that is released. And ready! That’s how easy and delicious the recipe for mussel croquettes is.
