Ingredients to make Mussel Bites:
For 4 people:
- 2 kg of mussels (preferably rock)
- 1 glass of evaporated milk
- 1 glass of white wine
- 50 grams of butter
- 2 tablespoons of flour
- 1 egg
- Bread crumbs
- Oil
- Salt
- White pepper
How to make Mussel Bites:
Put the mussels in a saucepan with the wine and leave them until they are open. Remove the valves, strain the broth and reserve it. Sauté the flour in the butter until golden brown. Add the evaporated milk and 1/2 cup of the mussel broth. Season with salt and pepper and cook for 20 min. continuously stirring. Let it cool.
Dip the mussels in the lukewarm bechamel sauce and let them cool on a plate with a little flour. Repeat this operation twice.
Go through beaten egg and breadcrumbs and fry them in plenty of very hot oil.
