Mushrooms stuffed with vegetables and cheddar cheese recipe

The stuffed mushrooms that I share below are very easy and quick to prepare. The mushroom, in addition to providing an excellent flavor to the most varied dishes, is a source of antioxidants.   • 8 large mushrooms
  • 100 milliliters of olive oil
  • 1 small onion chopped
  • 1 branch of Celery cut into small dice
  • 2 garlic cloves minced
  • 100 grams of dried tomatoes cut into pieces
  • 50 grams of grated Parmesan cheese
  • 1 tablespoon of oregano
  • 4 tablespoons of chopped basil leaves
  • 100 grams of slices of cheddar cheese
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

How to make Mushrooms Stuffed with Vegetables and Cheddar Cheese:

Preheat the oven to 180ºC and cover a tray with baking paper. Once this is done, we clean the mushrooms by removing the stem and cleaning the whole well to be able to fill them.  Then, we put them on the tray with the stem side up, season with salt and pepper and sprinkle with a little bit of oil. We bake for 15 minutes. Meanwhile, we prepare the sauce  for these delicious mushrooms stuffed with vegetables. To do this, heat the oil in a pan, add the onion, celery and garlic and fry over medium heat for 20 minutes or until the vegetables are tender. Add the dried tomatoes and fry for a few more minutes. Remove from heat and let cool.

Once cold, add the Parmesan, oregano and half the basil, season the mixture. Then, we stuff the mushrooms and place a piece of cheddar cheese on top. Return the stuffed mushrooms to the oven and leave them for about 10 minutes for the cheese to melt. We serve the mushrooms stuffed with vegetables and cheese by sprinkling them with a splash of oil on top. Without a doubt, it is an easy, quick and delicious recipe that fits perfectly with practically any type of dish, such as a cod fillet in sauce, chicken with vermouth or a quinoa burger if you follow a vegetarian diet.
