Mushrooms in Adobo Recipe

Ingredients to make Mushrooms in Adobo:

  • 1 tablespoon cider vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • A few drops of Worcestershire sauce
  • 2 tablespoons of tomato puree
  • 2 tablespoons of cold water
  • 1 tablespoon fresh mixed herbs
  • 1 small onion grated
  • 1 clove garlic, crushed
  • 450 gr. mushrooms, small, sliced

How to make Mushrooms in Adobo:

  1. If you use dry mixed herbs, you will only need half the amount. Put all ingredients, except mushrooms, in a screw-top jar and shake well.
  2. Add the mushrooms, pushing them down if necessary. Shake the jar again so that the mushrooms are coated with the marinade. If you don’t have a large screw-top jar, use any container with a lid. Put the jar in a cool place and leave it for 24 hours, shaking it from time to time, so that the mushrooms soften. During this time they reduce their size considerably and also produce a lot of liquid.
  3. Serve chilled with French toast.
