Mushroom Vegetable Pate Recipe

If you have a family reunion or a gathering with friends and you want to present a snack, nothing better than a good spreadable cream with crackers. The vegetable mushroom pate is very easy to prepare and the result is simply exquisite. Follow this easy recipe step by step and discover how to prepare an easy and delicious cold appetizer.

Ingredients to make vegetable pate with mushrooms:

  • 250 grams of mushrooms
  • 75 grams of Butter (⅓ cup)
  • 1 bunch of chopped chives
  • 100 grams of cottage cheese or fresh cheese without salt
  • 25 grams of breadcrumbs
  • ½ glass of semi-dry sherry
  • 1 pinch of salt
  • 1 pinch of black pepper

How to make vegetable pate with mushrooms:

To start preparing this delicious pâté, first melt half the butter in a pan to fry the spring onions. Continue sautéing for 5 minutes until the onion softens. Then add the mushrooms to the pan. Remember to finely chop the mushrooms before adding them to the sauce. Stir constantly and continue to cook over low heat until the mushrooms have turned a dark color and excess liquid has evaporated. Blend the sofrito until you get a more or less homogeneous paste, you can use a blender or any kitchen robot you have at home. Then, add the cheese along with the breadcrumbs and the sherry and beat everything again for a couple of minutes.

Next, melt the rest of the butter in the microwave and pour over the previous preparation. Beat again until you obtain a smooth and homogeneous purée and correct the seasoning with salt and pepper to taste.

Keep the vegetable mushroom pate in glass terrines and take it to the fridge until it cools completely, then you can serve it. And if you like vegetarian spreads, you can try the aubergine pâté with honey or the mushroom pâté.
