Mushroom Soup with Cheese Recipe

I confess that I used to buy ready -made mushroom soups… Until I tried this recipe that a friend passed me and that I modified to my liking. Easy and relatively quick to make, rich and, above all, with the ingredients that you want. This version of mushroom soup with cheese does not have liquid cream, as happens with many other recipes, so it is quite light -although it does include cheese, yes-.

Ingredients to make Mushroom Soup with Cheese:

  • 300 grams of Mushrooms
  • 300 grams of mushrooms
  • 1 unit of Onion
  • ¾ liter of chicken broth
  • 200 grams of grated cheese
  • 1 jet of olive oil
  • 1 pinch of salt
  • 1 pinch of black pepper
  • 1 glass of white wine

How to make Mushroom Cheese Soup:

  • Here we have the ingredients for this mushroom soup. You can choose the type of mushrooms you want, I have combined half mushrooms and half mushrooms. We will need a little less than a liter of chicken or meat broth, which if you prefer you can prepare following this classic recipe for chicken broth. For the cheese, I recommend a special grated tasty variety to melt.
  • We start the mushroom and cheese soup by poaching the onion, cut into julienne strips, in a frying pan with a little olive oil.
  • After a few minutes, add the mushrooms and mushrooms, previously washed. Season with salt and pepper and leave on low heat for at least 10 minutes.
  • Now we take the onion and the mushrooms to the blender and turn them into a cream of mushroom soup. We will add a little broth to help blend it well.
  • Transfer the cream of mushrooms to a pot, add the rest of the broth (in total, I have used three quarters of a liter, although if you prefer you can put the whole liter) and a glass of white wine. Bring it to a boil and let it cook over low heat for 15-20 minutes.
  • Five minutes before serving the mushroom soup, add the grated cheese and let it continue cooking so that the cheese melts.
  • We serve the mushroom soup with cheese very hot, and add a teaspoon of grated cheese to the dish, as well as a little black pepper. You can continue the menu with meatballs baked in Spanish sauce, really delicious, and for dessert try this lemon semifreddo. Take advantage!
