Ingredients to make Mushroom Soup:

- 500 grams of chopped mushrooms.
- 100 grams of onion.
- 1 clove garlic.
- 1 liter of vegetable broth.
- A few sprigs of parsley.
- 4 tablespoons of olive oil.
How to make Mushroom Soup:
- Wash the mushrooms and chop them.
- Peel the onions and cut them julienne (thin strips).
- In a saucepan, heat the oil and poach the onion in it.
- When it has taken color we add the mushrooms and the clove of garlic.
- Sauté, stirring constantly, until the mushrooms are soft.
- Cover with the vegetable broth and let it boil for 15 minutes uncovered.
- Blend the mushroom mixture with the help of a blender until creamy.
- If it were necessary for it to be more bound, we can add a little cornstarch.
- Season with salt and serve in individual bowls decorated with pieces of sautéed mushrooms and a little chopped parsley.
