Mushroom Soup Recipe

Ingredients to make Mushroom Soup:

  • for 4 people)
  • 500 grams of chopped mushrooms.
  • 100 grams of onion.
  • 1 clove garlic.
  • 1 liter of vegetable broth.
  • A few sprigs of parsley.
  • 4 tablespoons of olive oil.

How to make Mushroom Soup:

  1. Wash the mushrooms and chop them.
  2. Peel the onions and cut them julienne (thin strips).
  3. In a saucepan, heat the oil and poach the onion in it.
  4. When it has taken color we add the mushrooms and the clove of garlic.
  5. Sauté, stirring constantly, until the mushrooms are soft.
  6. Cover with the vegetable broth and let it boil for 15 minutes uncovered.
  7. Blend the mushroom mixture with the help of a blender until creamy.
  8. If it were necessary for it to be more bound, we can add a little cornstarch.
  9. Season with salt and serve in individual bowls decorated with pieces of sautéed mushrooms and a little chopped parsley.
