Mushroom Risotto recipe with Thermomix

Ingredients to make Mushroom Risotto with Thermomix:

  • 200 grams of onion
  • 150 grams of mushrooms
  • 30 milliliters of olive oil
  • 350 grams of Rice for risotto
  • 900 milliliters of Vegetable broth
  • 60 grams of grated Parmesan cheese
  • 1 teaspoon salt
  • 10 grams of Butter

How to make Mushroom Risotto with Thermomix:

  1. Plug in your Thermomix and get all the ingredients ready on the work table. Before starting to cook our risotto, it is important to keep a few things in mind:
  2. For this risotto recipe you can use the mushrooms that you like the most, mushrooms or a mix if you prefer
  3. You can get risotto rice in any supermarket, although you can always use normal rice as long as it is round or bomba rice, never long rice
  4. The amount of liquid for this recipe with Thermomix can be modified by dividing the amount of broth with a little beer, that is, about 200 ml of beer along with 700 ml of vegetable broth
  5. If you have a whole piece of cheese, you can grate it in the thermomix programming 10 seconds with progressive speed 5-10
  6. So, ready to cook, start by chopping the onion in the bowl at speed 4 for 4 seconds. Next, add half of the mushrooms and the oil right there, programming this time for 8 minutes with a temperature of 100º at speed 1.
  7. At the end of the process, add the rice and program for 3 minutes maintaining the same temperature but with a left turn and spoon speed.
  8. If you have decided to make your mushroom risotto with Thermomix by adding beer, pay attention to this step, otherwise you can continue to the next one.
  9. Add the beer, remove the beaker and program for 5 minutes, again at a temperature of 100º and turning to the left at spoon speed. What it will do is make the alcohol evaporate.
  10. Now it is the turn of the vegetable broth, which must be very hot before adding to the Thermomix. Then, add the broth along with the salt and put the machine to work for 12 minutes maintaining the temperature, rotation and speed.
  11. When the first 9 minutes have passed, add the rest of the mushrooms through the bowl.
  12. To finish off, serve the risotto in a bowl or on individual plates, adding bits of butter on top and sprinkling enough cheese on top and that’s it.
