- To make the mushroom broth, sauté the mushrooms with the onion trimmings and the crushed garlic. Sauté everything until the mushrooms begin to release their juices
- Add the water, thyme and bay leaf. Cook over low heat for 1 hour and then strain and set aside.
- To start preparing the risotto, the first thing you should do is sauté the onion and the finely chopped garlic until the onion is translucent, season with salt and pepper.
