Moroccan couscous recipe with vegetables

Ingredients to make Moroccan Couscous with vegetables:

  • ½ red pepper
  • 1 small zucchini
  • 6 mushrooms
  • ½ onion
  • 100 grams of Moroccan couscous
  • 1 tablespoon of fine herbs
  • 1 tablespoon of olive oil
  • 1 pinch of salt

How to make Moroccan couscous with vegetables:

  1. To prepare Moroccan couscous with vegetables, the first step is to gather the ingredients.
  2. Wash and cut the mushrooms, zucchini, onion and red pepper into small pieces, all separately.
  3. The next step to continue preparing the couscous with vegetables is to sauté the onion in hot olive oil until it starts to brown.
  4. When the onion is golden, add the remaining vegetables.
  5. Season with salt, sprinkle with herbs and cook for 5-10 minutes, stirring occasionally
  6. Meanwhile, continue preparing the Moroccan recipe by hydrating the couscous.
  7. To do so, you just have to place the couscous in a container that can withstand high temperatures, and pour the same amount of boiling water over it (100 ml). Add salt to taste and cover the container.
  8. Tip: Use vegetable broth to enhance the flavor instead of water.
  9. When the vegetables are ready, remove the lid from the couscous container and stir with a fork to check that it is done.
  10. Add the vegetables and mix everything.
  11. Moroccan couscous with vegetables is ready! Serve it with roast potatoes, for example, or as a main dish.
