Moroccan couscous recipe with Thermomix

Ingredients to make Moroccan couscous with Thermomix:

  • 1 bunch of fresh parsley
  • 2 onions
  • 500 grams of chicken breast or lamb meat
  • 2 teaspoons of Salt
  • 1 pinch of Pepper
  • 1 pinch of Saffron
  • 90 milliliters of olive oil
  • 3 carrots
  • 1 zucchini
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 900 milliliters of Water (3¾ cups)
  • 350 grams of Couscous
  • 100 grams of raisins
  • 30 grams of sugar
  • 250 grams of cooked Chickpeas

How to make Moroccan couscous with Thermomix:

  1. We start by chopping the onions in half and placing them in the glass to finish chopping them. To do this, program the Thermomix for 5 seconds at speed 8.
  2. Cut the chicken breasts into cubes, place the butterfly in the glass, and add the chicken inside along with a little salt, pepper, saffron and 40 milliliters of oil.
  3.  Program for 10 minutes, activating the temperature at 100º with a left turn and spoon speed.
  4. While the Thermomix works, we cut the vegetables into small pieces, both the carrot and the zucchini, the latter without peeling.
  5. After 10 minutes, we incorporate these vegetables together with some branches of parsley, cinnamon, ginger, and 550 milliliters of water.
  6.  Program then for 15 minutes maintaining the turn to the left, the speed of the spoon and the temperature in aroma mode.
  7. We take advantage of the time and on the other hand we start to cook the couscous.
  8.  To do this, place all the semolina in a container, with a pinch of salt, 50 milliliters of oil and 350 of hot water. Booking.
  9. Now to continue with the preparation of our Moroccan couscous in Thermomix, we add the sugar, the chickpeas and the raisins in the glass.
  10. We also place the couscous in the varoma container and program for 10 minutes, again maintaining the turn to the left, the speed of the spoon and the temperature in varoma.
  11. Remember that to place the varoma in its place you must place it on the tray on top of the Thermomix covered with baking paper.
  12. It is important to leave the side holes free for steam to pass and cooking to take place.
  13. When the machine is finished, stir the couscous well to loosen the grains and then you can serve the semolina and on top the chicken with vegetables and the sauce.
