Moorish Skewers Recipe

Ingredients to make Moorish Skewers:

  • 600 grams of lean pork
  • 300 grams of cherry tomatoes
  • 3 tablespoons of oil
  • 1 teaspoon of sweet paprika
  • ½ teaspoon of hot paprika
  • 2 fresh bay leaves
  • 1 teaspoon Thyme
  • 1 pinch of salt
  • 1 pinch of freshly ground pepper
  • 1 slice of bread
  • 2 cloves of garlic
  • 200 milliliters of virgin olive oil

How to make Skewers:

Cut the meat into cubes of approximately three centimeters. Clean the tomatoes and reserve. Mix the oil, sweet paprika, hot pepper, herbs, salt and pepper.  Fully spread the meat cubes and leave to rest overnight. Insert the diced meat onto the skewers, interspersing them with the tomatoes, and grill for approximately 8-10 minutes.

Cut the bread into slices, rub with the garlic and grill until browned and crisp. Serve the skewers with the bread sprinkled with a drizzle of olive oil.
