Moorish Pastela Recipe with Thermomix

The Moorish pastry or bastila is one of the most internationally known preparations of Arab cuisine. It is usually stuffed with chicken and almonds and has ground cinnamon. In this recipe, we are going to teach you how to prepare a Moorish pastry with Thermomix, which you can accompany with a delicious and typical Moorish tea.

Ingredients to make Moorish Pastela with Thermomix:

  • 1 package of frozen puff pastry
  • 500 grams of chicken breast
  • 2 medium onions
  • 3 eggs
  • 250 grams of Butter
  • 160 grams of sugar
  • 1 handful of pine nuts
  • 1 handful of Raisins
  • 1 handful of Almonds
  • 1 handful of parsley
  • 1 pinch of grated ginger
  • 1 pinch of saffron thread
  • 1 pinch of ground cinnamon
  • 200 milliliters of water

How to make Moorish Pastela with Thermomix:

The first step to prepare this Moorish pastry recipe with Thermomix is ​​to chop the almonds, raisins and pine nuts separately at speed 5-7-9 and reserve each ingredient for later. Next,  chop the chicken into small pieces and store it too. Then chop the onions, place the butterfly in the Thermomix, add the butter and the chopped onion and program the machine for 5 minutes at 100ºC and speed 1.

Next, add the meat, the almonds, the parsley, a pinch of cinnamon, the grated ginger and 200 ml of water, and program the Thermomix for 25 minutes, at a temperature of 100ºC and speed 1. Then add the pine nuts and raisins, the sugar, the salt, the saffron and the beaten eggs, and program the Thermomix for 3 minutes at 90ºC and speed 1.

Then in a round mold, place 1 layer of puff pastry, covering the entire edge of the mold.  Then fill it with the cooked pasta and cover it with another layer of puff pastry, closing the Moorish pastry with a few drops of water for the edge of the puff pastry.

Next, bake the Moorish pastry with Thermomix for about 10 minutes at a temperature of 180ºC or until it is golden. And now you can enjoy it!
