Ingredients to make Dachas de Matanzas Manchaca’s:

  • Flour
  • sweet paprika
  • pork liver
  • Lard
  • Garlic
  • Oregano
  • Water
  • Salt

How to make Montego Slaughter Porridge:

1.Exquisite typical Montego dish. Grass pea flour can be obtained at any store specializing in La Mancha products.

2.In a deep frying pan, melt 100 grams of lard. 6 cloves of garlic and 200 grams of pork liver are fried.

3.When fried, set aside and grind the liver and garlic in a mortar. In the same frying pan, fry the pea flour (1 full tablespoon per person) for 3 minutes.

4.Then add the paprika (one tablespoon of coffee per person) and fry for 20 seconds.

5.Add 1.5 liters of water, salt and oregano and cook until the porridge thickens, stirring every 2 minutes.
