Monkfish with sauce recipe

Ingredients to make Monkfish with sauce:

  • 1 monkfish tail of 1 kilo
  • ½ glass of olive oil
  • ½ glass of white wine
  • 1 onion
  • 2 garlic cloves
  • 1 bay leaf
  • 1 sprig of parsley
  • sweet paprika
  • peppercorns
  • salted
  • cooking thread
  • 100 grams of mayonnaise (you can use the light version)
  • 1 tablespoon fried tomato
  • The juice of half an orange

How to make Monkfish with sauce:

  1. Clean the monkfish tail, remove the central spine and skin, and tie with kitchen string, leaving it as before removing the spine.
  2. Season with salt and pepper, spread with olive oil, salt and paprika and wrap in aluminum foil.
  3. Place in hot water with the sprig of parsley, the bay leaf, the white wine, the pepper and the onion cut in half.
  4. Cook for 20-30 minutes and check the degree of hardness (it has to be like lobster).
  5. Remove from the casserole, let cool and remove the aluminum foil.
  6. Cut into slices and serve warm or cold accompanied by a lightened mayonnaise sauce with a tablespoon of tomato and a little orange juice.
