Ingredients to make Monkfish with sauce:
- 1 monkfish tail of 1 kilo
- ½ glass of olive oil
- ½ glass of white wine
- 1 onion
- 2 garlic cloves
- 1 bay leaf
- 1 sprig of parsley
- sweet paprika
- peppercorns
- salted
- cooking thread
- 100 grams of mayonnaise (you can use the light version)
- 1 tablespoon fried tomato
- The juice of half an orange
How to make Monkfish with sauce:
- Clean the monkfish tail, remove the central spine and skin, and tie with kitchen string, leaving it as before removing the spine.
- Season with salt and pepper, spread with olive oil, salt and paprika and wrap in aluminum foil.
- Place in hot water with the sprig of parsley, the bay leaf, the white wine, the pepper and the onion cut in half.
- Cook for 20-30 minutes and check the degree of hardness (it has to be like lobster).
- Remove from the casserole, let cool and remove the aluminum foil.
- Cut into slices and serve warm or cold accompanied by a lightened mayonnaise sauce with a tablespoon of tomato and a little orange juice.
