Monkfish with pineapple recipe

Ingredients to make Monkfish with pineapple:

  • 1/2 kg of monkfish in fillets
  • 5 pineapple slices in syrup
  • 3 onions
  • 5 garlic cloves
  • 1/2 glass of vinegar
  • oil
  • salted

How to make Monkfish with pineapple:

  1. Peel the onions and cut them into strips.
  2. Reserve them, peel the garlic cloves and cut them into slices. Drain the pineapple slices, chop them and reserve them.
  3. Clean the monkfish fillets, season them with salt, flour them and fry them in a pan with oil.
  4. Once cooked, remove them from the pan and place them in a serving dish.
  5. Put the oil in the pan and sauté the onion strips in it over low heat until golden.
  6. Add the pineapple chunks and sauté it for a few minutes as well. Remove everything and in the remaining fat, fry the garlic. When they start to take on color, add the vinegar, onion and pineapple.
  7. Give it a few turns so that everything is well mixed and pour it over the monkfish fillets.
  8. Serve it immediately.
