How to make Monkfish with milk:
- Peel and chop very small onion.
- Sauté it in a pan with oil and melted butter over low heat for 10 minutes.
- Add the flour, sauté it and gradually add the cold milk, stirring constantly.
- Add the tomato paste and the monkfish bone.
- Season the monkfish, remove the bone from the sauce and put the fillets on it.
- Give them a boil and when they are cooked, serve immediately.
