Monkfish recipe with romance sauce

Ingredients to make Monkfish with romance sauce:

  • 1 tablespoon chopped parsley
  • 3 garlic cloves
  • 200 grams of onions
  • 30 grams of raw almonds
  • 1 pinch of chili
  • 50 ccs of lemon juice
  • 1 pinch of ground black pepper
  • 1 kilo of monkfish
  • 4 dried peppers
  • 225 ml of olive oil
  • 350 grams of ripe tomatoes
  • 4 slices of bread
  • 1 pinch of salt

How to make Monkfish with romance sauce:

  1. Soak the peppers while in hot oil toast the almonds, the bread, and the garlic with the chili pepper and finally add the peppers. They drain well and are transferred to a mortar where they are crushed.
  2. In half of the excess oil, sauté the chopped onion until it begins to take on color, then add the chopped tomato and fry for about 10 minutes.
  3. Add this refried to the previous matador, mix everything well and pass through the mash mill. We will have the fish cut into slices and skinless, season it with salt, pepper and lemon, lightly flour it and brown it in the excess oil.
  4. Transfer to an earthenware dish and cover with the sauce, cook for about 10 minutes until the fish is tender. It is garnished with parsley.
