Monkfish recipe with langoustines and grilled mushrooms

Ingredients to make Monkfish with crayfish and grilled mushrooms:

  • 500 grams of clean monkfish
  • 8 peeled crayfish tails
  • 200 grams of mushrooms
  • 200 grams of potatoes
  • 2 dl of olive oil
  • Half a liter of milk
  • Crayfish shells and heads
  • 1 small glass of cognac
  • 2 shallots (or fresh chives)
  • parsley oil
  • For the garnish (300 grams in total)
  • turned carrot
  • spring onion
  • turned zucchini
  • Wild asparagus tips

How to make Monkfish with crayfish and grilled mushrooms:

  1. We prepare what is called crayfish oil in the following way.
  2. Sauté the chopped shallot in brounoisse, add the shells and heads of the langoustines and cook for a quarter of an hour.
  3. Flambé with the cognac, let cook for 5 minutes and strain.
  4. We make a mashed potato with the boiled potato and the milk.
  5. Chop the vegetables and scald them in boiling water.
  6. Chop the leftover vegetables and poach them with a little shallot, which we mix with the mashed potato and a little bit of crayfish oil.
  7. Sauté the diced spring onion and add the rest of the garnish and a bit of the parsley oil.
  8. We grilled the monkfish, the mushrooms and the langoustines and we composed the dish with the different elements.
