Monkfish in vinaigrette recipe

Ingredients to make Monkfish in vinaigrette:

  • 400 gr. clean monkfish

  • 1 green pepper
  • 1 spring onion
  • 1 red bell pepper
  • 100 gr. blanched broad beans
  • olive oil
  • vinegar
  • 1 boiled egg
  • salted

How to make Monkfish in vinaigrette:

  1. Cook the monkfish as if you were going to prepare it stretched, that is, with salt and paprika, and then wraps it tightly in aluminum foil.
  2. Cut the vegetables (pepper and spring onion) into squares or julienne strips and mix them in a bowl with the blanched broad beans.
