How to make Monkfish in oloroso sauce with clams and shrimp:
- Sauté the onion, garlic, raisins, pine nuts, chili pepper and bay leaf.
- Once the vegetables have been sautéed, place the monkfish, clean and cut into pieces, in the casserole along with the clams and the prawns.
- Flambé with the oloroso and add the fish broth.
- When the monkfish is well cooked, add the cream and let it reduce for 5 minutes.
