Ingredients to make Mojito Granita:

  • for 4 people
  • 1 glass of rum
  • 3 spoonfuls of sugar
  • 1 large glass of water
  • 1 glass of soda
  • 1 lemon
  • 20 fresh mint leaves
  • 100 gr. of almonds
  • 100 gr. of sugar
  • To decorate:
  • strawberries
  • Mint liquor
  • grenadine
  • sugar

How to make Mojito Granita:

  1. Remove the nerves from the mint leaves, place them in the mortar, and add the 3 tablespoons of sugar and pestle everything well.
  2. Pour in a squeeze of lemon juice and continue mixing.
  3. Also add half of the soda and mix well.
  4. Put the mixture in a strong plastic bag, pour the rest of the soda, water and rum.
  5. Close the bag tightly and put the bag in the freezer in a horizontal position until it is frozen.
  6. Put the 100 gr. of sugar in a pan, add a splash of water and a splash of lemon juice.
  7. When it melts and as soon as it starts to catch air, add the almonds.
  8. Cook over low heat, turning non-stop for about 8 minutes until they are well caramelized.
  9. Spread the edge of the glasses with mint liqueur or with grenadine liqueur, pass them through sugar.
  10. Pound up the frozen mojito, open the bag, and pour into glasses.
  11. Garnish them with a slice of strawberries.
  12. When you have the mojito in the freezer, be sure to stir it from time to time.
  13. The idea is that the mixture does not become a solid block of ice, which would prevent scratching the surface when serving to obtain the granita.
