Ingredients to make Mojito Granita:
- for 4 people
- 1 glass of rum
- 3 spoonfuls of sugar
- 1 large glass of water
- 1 glass of soda
- 1 lemon
- 20 fresh mint leaves
- 100 gr. of almonds
- 100 gr. of sugar
- To decorate:
- strawberries
- Mint liquor
- grenadine
- sugar
How to make Mojito Granita:
- Remove the nerves from the mint leaves, place them in the mortar, and add the 3 tablespoons of sugar and pestle everything well.
- Pour in a squeeze of lemon juice and continue mixing.
- Also add half of the soda and mix well.
- Put the mixture in a strong plastic bag, pour the rest of the soda, water and rum.
- Close the bag tightly and put the bag in the freezer in a horizontal position until it is frozen.
- Put the 100 gr. of sugar in a pan, add a splash of water and a splash of lemon juice.
- When it melts and as soon as it starts to catch air, add the almonds.
- Cook over low heat, turning non-stop for about 8 minutes until they are well caramelized.
- Spread the edge of the glasses with mint liqueur or with grenadine liqueur, pass them through sugar.
- Pound up the frozen mojito, open the bag, and pour into glasses.
- Garnish them with a slice of strawberries.
- When you have the mojito in the freezer, be sure to stir it from time to time.
- The idea is that the mixture does not become a solid block of ice, which would prevent scratching the surface when serving to obtain the granita.
