Mixed Vegetable Salad Recipe

The vegetable salad that we shares is loaded with nutrients, vitamins, fiber, and lots of energy. In this way, we can benefit from the antioxidant properties of carrots, in addition to their high content of beta-carotene, the high percentage of iron in onions, the vitamin C in peppers, and the diuretic and digestive properties of all of them. Ingredients to make Mixed Vegetable Salad:

  • 6 fresh tomatoes
  • 1 baby lettuce
  • 3 eggs
  • 2 carrots
  • 1 garlic clove
  • 1 spring onion
  • 8 prawns
  • 1 can of prickly pear
  • 1 green pepper
  • 1 large roasted bell pepper (red or yellow)
  • 1 pinch of oregano
  • 1 pinch of salt
  • 1 splash of Vinegar
  • 1 dash of virgin olive oil

How to make Mixed Vegetable Salad:

To prepare this salad you must wash all the vegetables well and cook the eggs. Then the tomatoes are peeled and finely chopped with a knife. The same should be done with the onions, the green and roast pepper, and the lettuce. All these ingredients are placed in a bowl, large plate or salad bowl.

Trick: You can add more ingredients to taste such as corn or cucumber.

When the eggs are cooked, they are chopped and added to the rest of the ingredients. Then, grate the carrot and the garlic cloves, add the peeled prawns, add salt, vinegar and oil to taste. The drained tuna is incorporated or not, according to our personal taste.

Tip: The prawns can be cooked or grilled.

Mix the mixed vegetable salad with egg and tuna well and serve. It can be eaten as a single dish during dinner, or accompanied with a grilled chicken breast.
