Mixed Paella recipe with chicken, pork and seafood

Ingredients to make Mixed Paella with chicken, pork and seafood:

  • ¼ chicken
  • 100 grams of lean pork
  • 200 grams of Rice
  • 6 tablespoons of Oil
  • ½ onion
  • 1 clove garlic
  • 1 tomato
  • 1 branch of parsley
  • 1 pinch of Salt and Pepper
  • ½ teaspoon sweet paprika
  • 1 pinch of Saffron
  • 3 green beans (canned)
  • 3 pieces of bell pepper
  • 4 fresh prawns
  • 4 Prawns
  • 4 mussels
  • 2 sole fillets
  • 1 Cuttlefish (small)

How to make Mixed Paella with Chicken, Pork and Seafood:

  1. To prepare the bottom of the mixed paella, heat 4 tablespoons of oil in a frying pan over low heat and fry the chicken together with the chopped pork. Keep cooking for 5-10 minutes until well-sealed on all sides.
  2. Next, add half of the garlic together with the onion, both peeled and finely chopped. Stir and continue to fry for another 5 minutes.
  3. Season with salt, paprika and pepper and continue cooking for a few seconds. Then add the peeled and finely chopped tomato to continue frying for another 5 minutes.
  4. After this time, remove from heat and reserve.
  5. To cook the rice, use a paella pan with two handles that always has a capacity for more than the number of diners.
  6. Bearing this in mind, we begin by heating the remaining two tablespoons of oil over low heat. Add the cuttlefish, cleaned and cut into medium pieces.
  7. After a couple of minutes, we add the rice in the peeler together with the saffron or the coloring. We mix everything well with the oil and then incorporate the background that we had previously prepared
  8. At this point we must add boiling water until it covers the rice completely and it is all flat. The amount of water will depend on the size of the paella pan, the important thing is that it completely covers the content, sticking out half a centimeter, more or less.
  9. Raise the flame and wait for about 8 minutes to pass, then place the prawns, prawns and mussels on top.
  10. The mussels must be already cooked, preferably steamed. You can add only the meat or leave them with half the shell for decoration.
  11. Trick: If you place the mussels with their shells, you must put them meat side down
  12. Continue and incorporate the rest of the ingredients, the sole fillets, the beans and the peppers cut into strips.
  13. If during the process the paella remains dry and the rice is not cooked, you can add a little hot water spread over the entire surface. Taste for salt and correct the seasoning if necessary.
  14. While we continue cooking the mixed paella, make a mincemeat of garlic and parsley with a tablespoon of broth. We mix it well and pour it over the paella, well spread.
  15. Total cooking time is about 18 minutes. When the rice is cooked, remove it from the heat and let it rest for a few minutes before serving.

  17. This mixed paella with chicken, pork and seafood is a super complete dish that does not need any garnish, although we recommend combining it with a delicious traditional Caesar salad as a first course or some bread with tomato.
