Mixed Mexican Fajitas Recipe

Fajitas are a very popular Mexican dish because, in addition to being delicious, they are very easy to prepare. This recipe for mixed Mexican fajitas is prepared with chicken and beef, among other common vegetables in the pantry, so keep reading and don’t miss the step by step of this rich and nutritious meal.

Ingredients to make Mixed Mexican Fajitas:

  • 250 grams of chicken breast
  • 250 grams of beef Milanese
  • 50 grams of Serrano chili
  • 150 grams of onion
  • 200 grams of pepper
  • 100 grams of Mushrooms
  • 250 grams of Montego cheese
  • 2 tablespoons of vegetable oil

How to make Mixed Mexican Fajitas:

The first step to prepare our Mexican fajitas will be to clean the mushrooms, carefully removing the skin that covers them, as shown in the photo, and cut them into quarters. Wash the rest of the vegetables, remove the tops and bottoms of the peppers, and make a cross section as shown in the photo. You can use red, green or yellow sweet peppers to taste.

Carefully remove the veins and seeds from the pepper. Cut the peppers into thin slices (julienne) and reserve. Cut the onion into halves and then into thin slices.

Cut the Serrano pepper into not very thick slices and reserve. Before cutting the chili you can spread your fingers with very little oil to prevent them from burning. Wash your cutting board or use a different one and with clean hands cut the chicken into strips. Separately,  cut the Milanese beef into strips.

In a large skillet, heat two tablespoons of oil over high heat, lightly sauté the onion and chili. Once the onion changes color and turns transparent, add the beef. Let the meat release a little juice and half cooked add the chicken strips. Cook for five more minutes without stopping moving. After that time, add the slices of pepper and mushrooms and integrate them well with the mixed fajitas. Season with salt and pepper to taste.

Once the vegetables are cooked to your liking, turn the heat down to low and top the fajitas with slices of Manchego cheese or some other gratin cheese, such as Oaxaca or mozzarella. Cover and remove from the stove. Keep the fajitas covered until serving time to prevent them from getting cold. Accompany them with warm tortillas and your favorite sauce.
