Ingredients to make Mixed Fish and Chicken Paella:
- For 4 people:
- 750g chicken
- 500 g monkfish (or conger eel)
- 200g of rice
- 250g green beans
- 125 g of whole grain beans
- 2 tomatoes
- 8 tablespoons of oil
- 1 sprig of rosemary
- 1 teaspoon paprika
- Saffron
- Salt
- 2 liters of water or broth
How to make Mixed Fish and Chicken Paella:
- We cut the chicken.
- Heat the oil in the paella and fry the meat until golden.
- Add the green beans to the paella, add the peeled and chopped or grated tomato and sauté both vegetables.
- Cover with boiling water and cook until the meats are tender.
- Add the grain beans, as well as the sprig of rosemary.
- We check the point of salt and add the paprika and a strand of saffron.
- Let cook until the meats and other ingredients are done and the broth is tasty.
- We reserve a little broth or water in case it is necessary to add it during the cooking of the rice.
- When the liquid is under the rivets of the paella, add the rice and mix with a slotted spoon so that it is well even.
- Cook over high heat for the first 10 minutes, add the chopped and seasoned monkfish and gradually cook over low heat for another 8 or 10 minutes.
- Finally, we let it rest for 5 minutes off the heat before serving.
