Mini Mushroom Burgers Recipe

Another wonderful recipe, this time it is a very versatile dish that you can serve as an appetizer, main course or even for dinner time. The mini mushroom burgers are perfect for any occasion and besides being vegetarian, they are simply delicious… Be sure to try them.

Ingredients to make Mini Mushroom Burgers:

  • 3 tablespoons of textured soy
  • 1 bunch of parsley
  • 4 green olives
  • 1 clove garlic
  • 3 tablespoons of olive oil
  • ½ dessert spoon of concentrated tomato paste
  • 1 splash of balsamic vinegar
  • 1 teaspoon Marmite
  • 1 pinch of pepper
  • 6 large mushrooms
  • 1 pinch of salt and pepper
  • 6 buns for mini hamburgers
  • Barbecue sauce
  • Wheat flour

How to make Mini Mushroom Burgers:

The first thing we will do to prepare these mini veggie burgers is to cook the stuffing for the mushrooms. To do this, hydrate the textured soybeans in hot water. Also finely chop the parsley, olives and garlic.

Heat a frying pan with the olive oil and slowly fry the garlic. Then add the soybeans, well drained, and season with the tomato paste, vinegar, marmite and pepper. Cook the filling, stirring constantly, until all the water evaporates. Separately, wash and dry the mushrooms very well. Remove the foot and fill them with the previous preparation. The idea is to level the surface with the filling so it looks like a hamburger. Sprinkle the surface, on the filling side, with sifted flour. Recover the same pan where we prepared the filling, spread it with a little more oil and fry the mushrooms with the filling facing down . Remember to leave the pan over medium heat and turn the mini burgers over when you see that the filling has browned well and browns from side to side. Add a little salt and pepper on the opposite side of the filling. Cut the hamburger buns in half and heat them in a clean skillet over moderate heat. The idea is to lightly toast the bread without burning it. To finish assembling the mini veggie burgers, spread the bottom of the buns with a little barbecue sauce and top with a stuffed mushroom. Cover with the bread lid and place a wooden toothpick to hold.
