Minestrone Soup Recipe with Thermomix

Minestrone soup, minestrone or menestron, is a typical Italian dish made from seasonal vegetables. It is similar to the Spanish vegetable soup and sometimes pasta or rice can be added to it. In this recipe we will use the most common ingredients to prepare this delicious soup, however, there is no fixed recipe and, therefore, you can add or remove all the vegetables you want. You can prepare a dish suitable for vegans and vegetarians, like the one we propose here, or incorporate meat or ingredients made from meat, such as chicken broth. And to make cooking easier for you, we will use the Thermomix! Keep reading and discover the steps to prepare minestrone soup in an easy way.

Ingredients to make minestrone soup with Thermomix:

  • 600 grams of mixed vegetables (carrots, zucchini, green beans, broccoli and cauliflower)
  • 1 unit of small onion
  • 1 unit of Leek
  • 40 grams of olive oil
  • 1 liter of water
  • 1 teaspoon salt

How to make minestrone soup with Thermomix:

  • Before we get down to work, we leave all the ingredients ready. I have used the vegetables named in the previous list, but you can add or remove the ones you want.
  • We introduce half of the vegetables into the Thermomix glass and program the machine for 5 seconds at speed 4. In this way, we will chop the vegetables.
  • When they are, remove the vegetables from the glass and reserve them. Repeat the same process with the other half of the vegetables. We also reserve them.
  • Put the onion cut into four pieces and the sliced ​​leek into the Thermomix glass. We chop these ingredients programming the machine in the same way as in the previous steps, that is, 5 seconds at speed 4.
  • Pour the oil and fry the onion and leek for 3 minutes, at varoma temperature and speed 1.
  • We add the vegetables that we have reserved, the water and the salt. Then, we program the machine as follows: 25 minutes at a temperature of 100ºC and speed 1.
  • And ready! Once the time has passed, you can remove the minestrone soup and serve it warm. And for dessert…, I encourage you to prepare a delicious cappuccino tiramisu!
