If you fancy a healthy and nutritious vegan burger, don’t miss this recipe for millet burgers. These are hamburgers made from various cereals, legumes and nuts that, combining their flavors and textures, give a delicious result.
I used lentils and buckwheat as a base for the homemade millet burgers that I share and added cooked millet instead of breadcrumbs or eggs so that the burgers don’t fall apart. To add a touch of crunch and a supply of extra nutrients and healthy fats, I have added peanuts and pine nuts and a rich combination of spices to make the flavor even more irresistible.
Ingredients to make millet burgers:
- ¾ cup cooked millet
- ½ cup cooked lentils
- ½ cup cooked buckwheat
- 1 handful of peanuts
- 2 tablespoons of pine nuts
- 1 zucchini
- 1 red onion
- 1 carrot
- 1 splash of soy sauce
- 1 splash of olive oil
- 1 teaspoon garlic powder
- 1 teaspoon of oregano
- ½ teaspoon rosemary
- ½ teaspoon dried basil
- ½ teaspoon thyme
- ½ teaspoon Himalayan pink salt
How to make Millet Burgers:
- Cut the onion, carrot and zucchini into small cubes and prepare a sauce for the vegan millet burgers.
- In a bowl mix the lentils, buckwheat and millet (note that these ingredients must be cooked in advance).
- Add all the spices, sofrito, soy sauce, chopped peanuts and pine nuts and mix well.
- Take portions of dough with your hands and form the millet and carrot burgers or use a special utensil to make the burgers the same size.
- Cook the millet and lentil burgers in the oven at 180 degrees for half an hour or fry them on both sides until golden brown.
- Serve the homemade millet patties on the plate with a side of vegetables or serve on a hamburger bun.
- To do this, spread the lower lid of the hamburger bun with vegetable mayonnaise and the upper one with mustard.
- Place slices of cucumber and tomato, arugula, grated carrot and the hamburger on top of the bread. Cover with the bread and fix the burger with a toothpick.
