Ingredients to make Milk Atole:
- 4½ cups of Water (separated)
- 1 cup of cornmeal (120 grams)
- 2 cups of evaporated milk
- 1 cup of Sugar (200 grams)
- 1 teaspoon vanilla extract
- 3 cinnamon sticks
- 1 pinch ground cinnamon (optional)
How to make Milk Atole:
- Place 3 cups of water and the flour in a blender. Process everything until smooth.
- Strain the masa and put it into a medium saucepan. Bring to a medium heat until it comes to a boil.
- Reduce heat to low and cook over low heat, stirring frequently using a wire whisk, for 6 to 8 minutes or until mixture thickens.
- Separately, mix the evaporated milkwith the rest of the water, sugar, vanilla extract and cinnamon sticks.
- Combine the two mixtures and bring to a boil. Then reduce the flame and cook over low heat for 5 to 8 minutes or until the mixture thickens.
- Take out the cinnamon sticks and serve the hot milk a tole sprinkling with a little cinnamon or condensed milk.
