Milanese Soup Recipe

Ingredients to make Milanese Soup:

  • For 4 people:
  • 250 grams of white beans
  • 1 carrot
  • 1 zucchini
  • 2 potatoes
  • 1 leek
  • 1 onion
  • 100 grams of tomato
  • 1 piece of white cabbage
  • 50 grams of margarine
  • 50 grams of pancetta
  • 1 meat extract tablet
  • 100 grams of pasta for soup
  • 50 grams of grated Parmesan cheese
  • Salt

How to make Milanese Soup:

  1. Soak the white beans in cold water the night before.
  2. In a casserole the margarine, the finely chopped bacon, and add the vegetables chopped into fine strips (julienne).
  3. Let the vegetables fry a little with the pan covered, then add the peeled tomatoes, without seeds, cut into small pieces, season with a little salt and cover with cold water, leaving to cook over low heat for about an hour and a half.
  4. Fifteen minutes before serving, add the pasta and the meat extract.
  5. If the soup is too dry, add a little more hot water.
  6. Before removing it from the heat, at the time of serving, we add a good spoonful of Parmesan cheese.
