Milanese rice recipe with sausages

Milanese rice is a kind of yellow risotto that is very typical in Italy, specifically in the cities of Lombardy and Milan, which is based on making a sauce, toasting the rice and ending up cooking it like a homemade risotto with grated Parmesan cheese.

Ingredients to make Milanese rice with sausages:

  • 300 grams of Rice for risotto
  • 200 grams of pork or Frankfurt sausages
  • 100 grams of butter
  • ½ onion
  • 500 milliliters of beef broth
  • 1 glass of white wine
  • 50 grams of Parmesan
  • Saffron
  • 1 pinch of salt
  • 1 pinch of pepper

How to make Arroz a la Milanesa with Sausages:

  1. The first thing we have to do to make this Milanese rice with sausages is finely chop the onion and fry it with the butter in a pan until it turns golden brown.
  2. Next, we cut the pork or Frankfurt sausages into slices to our liking and fry them together with the onion in the pan.
  3. Then we add the rice and toast it together with the sofrito until we see that the grains are glassy.
  4. Then we add the white wine and raise the heat to bring the Milanese rice to a boil.
  5. Once it boils, lower the heat to medium, and gradually add the meat broth to the Milanese rice as if it were a risotto, not throwing it all at once but adding a little, stirring so that it is almost completely absorbed, and then repeat the same operation until the rice is cooked al dente (approximately 18 minutes)
  6. When we see that the milanese rice with sausages is about to be done, season with salt and pepper and add a few strands of saffron.
  7. Finally, turn off the heat, add the grated Parmesan cheese and mix everything together so that the Milanese rice with sausages has the consistency of a risotto. And ready!
