Microwave Zucchini Pie Recipe

Zucchini cake without oven, simple and quick to make. These cakes are usually made in the oven and some with puff pastry or short crust pastry bases, however, we show a much easier and cheaper recipe, since it does not require an oven or any base dough. In turn, it is lighter and healthier.

Zucchini is a vegetable that is consumed a lot, it is one of the most popular and is very healthy. You can make various recipes with zucchini such as creams, fries, stuffed zucchini, fried, battered… We have a lot of possibilities to cook with zucchini. It contains many vitamins and minerals and a lot of fiber and is low in calories. In short, it is an essential food in our diet and with this cake we can introduce it without any problem. This cake is similar to a quiche but much lighter. Cooking with the microwave is simple, but it is necessary to know our microwave in order to adjust the power and time to the characteristics of our appliance. Ingredients to make Zucchini Pie in the microwave:

  • 2 courgettes
  • 1 onion
  • 3 eggs
  • 150 milliliters of cooking cream (milk cream)
  • 50 grams of grated cheese
  • 3 tablespoons of olive oil
  • 1 pinch of salt

How to make Zucchini Pie in the microwave:

Peel and chop the onion and wash the courgettes, which can be left with or without the skin. Cut the zucchini into thin slices.

Trick: If you have a mandolin, use it to cut the zucchini, so you will get thinner slices.

Put a frying pan with a few tablespoons of oil and add the onion and courgette. Saute these vegetables until they are poached. If you prefer, you can also add these raw ingredients to the dough and let them cook in the microwave. This way they won’t be as soft, but it’s a much faster option.

Trick: You can add other vegetables such as carrot or eggplant. In both cases, in very thin slices.

Butter or oil a microwave-safe pan. We have used a glass mold of about 22 cm in diameter. Beat the eggs with the cream in another bowl or in the same one that you are going to use to cook the courgette pie in the microwave. Add part of the cheese and a little salt and continue beating.

Add the poached vegetables and integrate them into the dough. Remember that you can also add the raw vegetables, although previously cooked they give the microwaved zucchini cake an extra flavor. Incorporate the rest of the cheese on top of the mixture so that it is a little gratin.

Tip: You can also add slices of ham or a can of drained and shredded tuna.

Cook the zucchini pie in the microwave at 950 W for 6 minutes. Look how this time has passed, and if the center is still not done, leave it for 2 more minutes. Again, take it out and decide if it is necessary to leave it for a few more minutes. When it’s done, let it rest for 2-3 minutes.

Tip: We recommend adding time minute by minute to prevent it from burning.

Unmold the cake and place it on the serving plate. If you like it more golden, you can activate the grill function in the microwave for a few seconds. This microwave zucchini cake is delicious, it is very easy and has nothing to envy the traditional one made in the oven.
