Microwave Vegetable Pie Recipe

To cook a delicious simple vegetable pie you only need the desire, your favorite vegetables, some eggs and the microwave that you usually only use to heat things.

Today we show you how to prepare a vegetable cake without cream, a little lighter than the classic version because instead of this ingredient we will use regular milk. Ingredients to make Microwave Vegetable Pie:

  • 500 grams of spinach
  • 250 grams of Carrots
  • 250 grams of Peas
  • 1 piece of red pepper
  • 10 tablespoons of Water
  • 6 eggs
  • 250 milliliters of Milk
  • 1 pinch of salt
  • 1 pinch of Nutmeg

How to make Microwave Vegetable Cake:

  1. Gather all the ingredients to prepare our vegetable cake without cream and start by chopping the spinach.
  2.  To cook them, place them in a hermetically sealed plastic bag along with 2 tablespoons of water and a little salt and microwave at 780W for 5 minutes.
  3. In the market there are special bags for microwave roasting, if you can get them, much better.
  4. Next, we chop the carrot and the red pepper and strain it together into another bag with 6 tablespoons of water and a little salt.
  5.  We program the microwave again for 5 minutes at 780W and then for 6 minutes, lowering the power to 450W.
  6. For this recipe we have used canned peas, but if you prefer to use raw peas, you can also cook them in the microwave by placing them with 2 tablespoons of water and a little salt for 5 minutes at 780W.
  7. With the vegetables ready, we proceed to beat the eggs with the milk and season with a touch of salt and nutmeg to taste. You can add other seasonings like hot paprika if you want.
  8. Now divide the egg mixture into three parts and mix each part with the roasted vegetables.
  9.  That is, one part with the spinach, another with the carrot and the peppers and another with the peas.
  10. To finish, grease a rectangular mold of about 28 cm with butter.
  11. Long, remember that it must be suitable for microwaves. Then empty the first egg mixture with spinach and cook for 2 minutes at 780W.
  12. After this time, add the carrot mixture on top and cover the mold with plastic wrap.
  13. Then cook in the microwave for 4 minutes at 450W.
  14. Then, add the final mixture with peas, cover the pan again and cook for 6 minutes at 450W.
  15. If you prefer to make a much more practical cooking, you can combine everything and cook in the microwave for 5 minute intervals at 450W, with the mold covered, until the cake is cooked.
  16. Wait a few minutes until the mold cools down a bit, preferably at room temperature, and unmold the vegetable pie in the microwave.
  17. When serving, you can accompany it with a quick béchamel sauce and some garlic bread
