Ingredients to make Tocino de cielo in the microwave:

  • 1 glass of sugar
  • 1 glass of water
  • 5 egg yolks L
  • 1 egg L
  • 1 tablespoon liquid caramel

How to make Tocino de cielo in the microwave:

  1. Put the glass of water and the sugar in a bowl suitable for the microwave.
  2. Mix a little with a spoon, put it in the microwave at maximum power and cook for 12 minutes.
  3. Carefully remove the bowl from the microwave and allow the syrup to warm or cool completely.
  4. Put the egg yolks and the egg in a separate bowl and beat. With the leftover egg whites you can make homemade meringue.
  5. Add the previous syrup in the form of a thread while you beat the eggs and integrate these ingredients well.
  6. It is important that everything is well mixed so that the microwave bacon has the perfect texture.
  7. Put the tablespoon of liquid caramel in a small square mold, about 14×14 cm and that is suitable for the microwave. It can also be silicone.
  8. Spread the tablespoon of caramel with a spatula through the mold.
  9. Strain the mixture of yolks and syrup and carefully pour it into the mold.
  10. Cook the bacon in the microwave for 5 minutes at maximum power. Open the microwave after that time and let it rest inside for 1 minute.
  11. Close the microwave door and cook for another 4 minutes. Remove the mold carefully, as it will be boiling.
  12. The bacon de cielo will still be very hot and will not appear fully curdled, but it will compact as it cools.
  13. Click with a toothpick to check that it comes out without any remains of dough, that will mean that it is already cooked.
