Microwave rice pudding recipe

Rice pudding is a traditional dessert with great acceptance, especially if it is homemade. The problem with this dessert is that it takes a long time to cook and you have to work with great care. By making this delicious dessert in the microwave, we are going to save time and the result is quite good, with a flavor very similar to the traditional one.

Ingredients to make Microwave Rice Pudding:

  • 250 grams of rice
  • 300 milliliters of water (1¼ cups)
  • 15 grams of butter
  • 1 pinch of salt
  • 1 lemon
  • 700 milliliters of milk
  • 4 tablespoons of sugar
  • 1 dessert spoon of ground cinnamon

How to make Microwave Rice Pudding:

  1. Put the rice with the chopped butter, water and a pinch of salt in a microwave-safe bowl.
  2. The bowl where you are going to put it has to be quite large, it is better that it be deeper than wide.
  3. Cook covered with a microwave-safe lid for 5 minutes at 750 If your microwave does not put the type of power, put it at maximum power.
  4. Take the rice out of the microwave being careful not to burn yourself and add the milk and the lemon rind(you can also add a teaspoon of vanilla extract), trying not to have too much white part, which is the bitterest part of the lemon.
  5.  Cover again with the lid and cook the rice pudding in the microwave at 750 W or maximum power for 5 more minutes.
  6. Trick: Remember that the bowl has to be large so that the liquid does not come out and spill.
  7. Take the bowl out of the microwave again, stir the rice a little, cover with the lid and put it back in the microwave.
  8. Reduce the microwave power to 350 W and cook the rice pudding for another 15 minutes.
  9.  If you don’t know the power of your microwave, cook the dessert at minimum power.
  10. Take the rice out of the microwave, check that it still has milk and that it has not completely absorbed it, because once cold, the rice tends to stay a little dry, which is why it is preferable that it be left over at first.
  11. Test the cooking point and if you see it well, add the tablespoons of sugar. Remove the lemon rind, stir and test that it is at its sweetest point for you.
  12. Tip: If you see the rice already cooked but it is rather dry, add more milk and stir, you will not need to cook it any more.
  13. You can eat it freshly made, still warm, as it is delicious, but if you prefer it cold, keep it in the fridge until it cools down. When serving, sprinkle cinnamon powder on top.
