Ingredients to make Michoacán Poole:
- 1 large can of hominy corn
- 2kg of roasted tomato
- 1/4 of kg of anchor chili
- 1/4 kg of non-spicy guerilla chili
- garlic to taste
- 1kg of pork loin
- 1kg of pork cheek
- laurel
- thyme
- oregano to taste
- corn tortilla toast
- radishes
- chopped onion to taste
- chopped lettuce to taste
- piquing chili powder to taste
How to make Michoacán Poole:
- Boil the corn pooled a little more, roast the tomatoes and garlic (2 large cloves) boil the deveined chills and without the seeds cook the pork with garlic, onion and salt as they are ready.
- Blend the tomatoes, chills, and garlic and put them in a saucepan with oil and season them, add the pork and diced pork cachet, add bay leaf, thyme and oregano, salt to taste.
- Michoacán pooled is served with toast, lettuce, radishes and chopped onion.
