Ingredients to make Mexican Tuna Empanadas:

  • 16 pieces of corn tortilla

  • 3 pieces of red tomato
  • 1 piece of onion
  • 1 clove garlic
  • 1 tablespoon of oil
  • 1 pinch of salt
  • 1 pinch of pepper

How to make Mexican Tuna Empanadas:

In the following image we present the ingredients to use. Before starting to cook it is always important to gather all the ingredients, so you will see that the preparation becomes even easier. We are going to start by chopping the onion, the red tomatoes and the garlic. Next, in a frying pan, with previously heated oil, place the onion to fry. Since the onion is slightly transparent, we add the chopped red tomato and leave for a moment stirring constantly. When the onion and tomato are well incorporated, add the tuna along with a pinch of salt and pepper to season. We move for 5 more minutes and remove from heat to reserve aside. To assemble the Mexican tortilla empanadas, we must heat the tortillas so that they are flexible. Then, we begin to fill them with our Mexican-style tuna stew, and then close them forming a crescent.

Remember you can make your own homemade tortillas by following the recipe for corn tortillas step by step that you will find in the tortilla section. Once we have filled all our tortillas, we begin to fry the empanadas. To do this, use a pan with enough previously heated oil.

Trick: I advise you to close your empanadas with the help of small wooden sticks so that your empanadas do not open.

Once the empanadas are well browned, remove them from the oil and let them drain for a moment, to remove the excess oil. You can use a colander or a plate with absorbent paper. CLEVER!! You can serve your Mexican tuna empanadas accompanied by a lettuce and red tomato salad, as well as dressing them with a few drops of lemon.
