Mexican Migas Recipe

Ingredients to make Mexican Migas:

  • 100 grams of shredded chicken
  • 1 liter of beef broth
  • 1 piece of Egg
  • 1 piece of chipotle chili
  • 2 pieces of bolillo
  • 3 garlic cloves
  • 100 grams of aged cheese
  • 50 milliliters of oil
  • 5 grams of Marjoram
  • 1 pinch of salt

How to make Mexican Migas:

  • The first step is to prepare the ingredients and utensils that we are going to use. To make the Mexican migas we start by soaking the bolillos in cold water for ten minutes.
  • Fry the minced garlic in hot oil over medium heat, when they are well fried add the shredded chicken and let cook for a few more minutes.
  • Then we pour the broth and, when it starts to boil, we add the soaked bread and the marjoram. Immediately, add the beaten and raw egg through a strainer so that it dissolves over the entire preparation.
  • Add the chili and boil everything over medium heat for approximately 20 minutes. Serve the Mexican migas very hot and sprinkle the grated cheese on top as well as a little cilantro.
