Ingredients to make Mexican Cheesy Mushroom Quesadillas:

  • 16 pieces of corn tortillas
  • ½ piece of white onion
  • 2 pieces of red tomato
  • 1 kilogram of mushrooms
  • 300 grams of sliced ​​Manchego cheese
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 tablespoon of oil

How to make Mexican Cheesy Mushroom Quesadillas:

In the following image you can see the ingredients that we will need to prepare these exquisite Mexican-style mushroom quesadillas. We are going to start by washing the mushrooms and, once clean, slicing them finely. We reserve them for a moment. On the other hand, we take the red tomato and the onion, chop them finely and fry them in a pan with hot oil. Add a pinch of salt and a pinch of pepper, integrate and let them fry over medium heat, until the onion is transparent. Once the onion is ready, add the sliced ​​mushrooms and move to integrate them. Let them cook until they are soft, then add a pinch of salt and pepper. When the Mexican-style mushroom sauce is ready, we reserve it for a moment to continue with the preparation of the quesadillas with cheese. Now, to form the mushroom quesadillas , we take a corn tortilla and place half a slice of Manchego cheese on one of the halves and, on top of the cheese, add a little of the Mexican-style stewed mushrooms, as shown in the next image. Now we fold the tortilla covering the filling and repeat the operation with the rest of the corn tortillas. Then, we cook the quesadillas on the grill and let the cheese melt. And ready! You can serve the Mexican cheesy mushroom quesadillas accompanied with the sauce that you like the most, such as sour cream, salsa Verde or salsa chipotle if you feel like adding a touch of heat.
