Meringue milk ice cream recipe

Ingredients to make Milk Meringue Ice Cream:

  • 500 milliliters of whole milk
  • 500 milliliters of whipping cream (milk cream)
  • 4 egg whites
  • 5 tablespoons of sugar
  • 1 tablespoon of sugar for the whites
  • 1 piece of lemon peel
  • 1 cinnamon stick
  • 1 tablespoon ground cinnamon

How to make Milk Meringue Ice Cream:

  1. Prepare the homemade milk meringue.
  2. To do this, put the milk in a saucepan with the cinnamon stick, the 5 tablespoons of sugar and the lemon peel.
  3.  Let the milk cook and, when it starts to boil, lower the heat a little, let it boil and infuse with the cinnamon and lemon peel for about 10 minutes.
  4.  Turn off, let cool and put it in the fridge to cool down sooner.

  6. Lightly whip the cream.
  7. Once this is done, take the milk out of the fridge, remove the cinnamon stick and the lemon peel, add the cream to the milk and mix little by little with a few rods.

  9. Beat the egg whites until stiff. Add the sugar when they are half assembled and continue beating.

  12. Pour the mixture into a glass container or a metal tray that is suitable for the freezer and has a lid.
  13. Put the container in the freezer and, every hour, take it out to stir the meringue milk ice cream with some rodsor a fork.

  15.  You will have to repeat this process about 3-4 times every hour for 2-4 hours, then leave it to finish freezing covered so that it does not pick up odors.
  16. When you are going to serve the ice cream, take it out of the freezer a few minutes before so that it thaws slightly and is creamy.
  17. Prepare the ice creams with a spoon or with an ice cream scoop.
  18. Sprinkle some ground cinnamon just before serving and decorate with some ice cream cookies.
