Meringue cake recipe

Ingredients to make Meringue Cake:

  • 200 grams of sugar (1 cup)
  • 140 grams of icing sugar
  • 15 grams of cornstarch
  • 1 dessert spoon vanilla
  • 1 dessert spoon lemon juice
  • for the jam
  • 500 grams of strawberries or strawberries
  • 250 grams of sugar (1¼ cups)
  • 10 milliliters of lemon juice
  • 3 drops of red food coloring
  • For the whipped cream
  • 500 milliliters of whipping cream with at least 30% fat
  • 65 grams of icing sugar
  • 20 grams of milk
  • 1 dessert spoon vanilla

How to make Meringue Cake:

  1. The meringue forms the base of this delicate dessert, therefore it is the first thing to do.
  2. For this, separate the whites from the yolks and weigh the rest of the ingredients. Preheat the oven to its minimum temperature.
  3. If your oven is too hot, consider keeping the door slightly ajar while baking the Italian meringue pie.
  4. Beat the whites at maximum speed and when they start to rise, add the sugar little by little and in the form of rain.
  5. When you have added it all, add the already sifted icing sugar, also little by little.
  6. At this point, you should already have a pretty strong meringue. It is time to add the vanilla and lemon juice.
  7. Just need to add the cornstarch. Sift it like icing sugar. The texture of the meringue is firm and shiny.
  8. Transfer the meringue to a pastry bag. The sleeve will help form the cake meringues more evenly. If you don’t have one, don’t worry, you can also do it with a spoon, but it will take longer.
  9. Bake the meringues on kitchen paper. For this, you have two options: cut three circles of 20 centimeters in diameter or draw them on the paper that you will put at the bottom of the tray. In either case, adhere the paper to the tray with a little of the same meringue.
  10. Bake them for 1 hour at a very soft temperature.

  17. Sift the icing sugar together with the powdered milk.
  18. Now, take the cream out of the freezer and beat at maximum speed. When it starts to rise, sprinkle the icing sugar and milk.
  19.  Also add vanilla or flavoring of your choice. Beat for several more minutes until firmer.
  20. It is important to do this until the cream has structure and no more, because it can turn into butter.
  21. Plating the strawberry meringue cake is relatively simple.
