Sole menier or à la Meniere is a typical dish of French gastronomy. This way of cooking the fish consists of making a light batter and bathing in a citrus sauce made with butter and lemon. Stop always cooking the same thing and innovate in the kitchen with this easy and different fish recipe.
Ingredients to make Sole menier:
- 4 sole fillets
- 1 glass of milk
- 50 grams of flour
- 75 grams of Butter (⅓ cup)
- 1 tablespoon chopped Parsley
- 1 unit of Lemon (juice)
- 1 pinch of salt
- 1 jet of Oil
How to make sole menier:
- Clean the fish very well and season each of the fillets with salt and pepper.
- Then prepare the sole for a batter. Pass the fillets first in milk and then in flour, shaking to remove the excess.
- Fry the fillets in a pan with plenty of oil over medium heat until they are done and slightly golden. Eliminate excess oil with absorbent paper and reserve with heat.
- Apart prepare the menier sauce. To do this, melt the butter in a small saucepan over medium heat until it turns a little golden, and then add the lemon juice and a little salt.
- To serve the sole a la menier, place the fillets and bathe them with the butter sauce. Garnish with lemon slices and parsley.
