Are you wondering what Mexican memelas are? The memela in its most traditional form is a thick, oval tortilla that is cooked on a griddle and accompanied by beans, stews, sauces, and cheese. Sometimes it is often confused with Mexican sopes, but the clear difference is in size and frying, which in this case is not usually deep fried. Do you fancy this Mexican appetizer? Well, know the ingredients that you can add to delight yourself and surprise your family.

Ingredients to make Memela:

• 500 grams of corn dough

• 50 grams of vegetable or lard

• 1 pinch of salt

• Oil the necessary

• 1 cup of refried beans

• 2 hardboiled eggs

• 1 cooked sliced plantain

• Sour cream to taste

• 1 avocado sliced

For the sauce

• 4 pieces of green tomato

• 2 Serrano peppers

• 1 piece of onion

• 1 dozen garlic

• 1 sprig of coriander

• 2 cloves

• 1 pinch of dried oregano

• 1 pinch of salt

• 3 tablespoons of oil

How to make Memela:

Start the memela recipe by placing the corn dough in a container. Next, you must add a pinch of salt and lard, in this case it can be vegetable or pork. Knead the dough to soften it and make it manageable. If you can’t get a ready-made dough, you can make it with cornmeal according to the package directions. You should let it rest for about 15 minutes.

While the dough rests, prepare the sauce. To do this, fry the green tomatoes, the piece of onion, the garlic clove and the chilies with about 3 tablespoons of oil. Blend with a little water, the coriander branch, a pinch of salt, two cloves and a pinch of oregano. Then, go to a container and reserve. Form portions of approximately 70 grams and with the help of a tortilla press or with a rolling pin, spread it out so that it acquires an oval shape, about 20 cm long.

Cook on a hot griddle on both sides, and, when the edges have been cooked well, slightly pinch the edges and spread a little oil. Next, add the refried beans. Add a little green sauce, sliced boiled egg, avocado, sliced plantain and sour cream to taste. The memela recipe is ready!

Mexican memelas and other ingredients

To make this recipe you can combine more ingredients, substitute or choose a few to add to the memela. Even in its most basic form you can try the memela with green sauce or Mexican red sauce and crumbled fresh cheese, you can also choose a stew with beef or chicken. Marinated chicken is great! And, if you like a crunchier texture, try frying the memela a little more and accompany it with fried pork rinds. Quite a taste experience!
