Melon and mint soup recipe

Ingredients to make melon and mint soup:

  • 1 unit of Melon
  • 1 tablespoon of lemon juice
  • 1 small glass of syrup
  • 5 mint leaves
  • orange granita
  • 100 milliliters of orange juice
  • 100 grams of syrup
  • Garrison
  • 1 handful of fresh mint
  • 1 handful of orange segments
  • 1 tablespoon of sugar (to mark the orange)
  • 1 handful of diced melon

How to make Melon Mint Soup:

  1. To make the granita, one day before serving the dessert, mix the syrup and the orange juice in a bowl and put it in the freezer. To make the melon soup, put the melon pieces in a bowl and mash them.
  2. Next, add the lemon juice and a little neutral syrup and beat again. Then blanch the mint in boiling water, stop cooking in ice water and add it to the melon soup. Blend everything and let it cool for 3 or 4 hours in the fridge.
  3. Optionally, you can brown the orange segments in a pan with sugar until they take on a little color. To finish, put the melon cubes in the center of a plate.
  4. Next, add the 3 pieces of lychee, 3 halves of currant, 3 pieces of passion fruit and the orange segments around it. Then add the granita, which you will have previously frosted. Finally, add the very cold melon soup.
